Aislinn McManigal and Sebastian Quintana met as line cooks working at Tom Douglas’ Lola in Downtown Seattle. It was love at first shift but the paths that brought them together were worlds apart. Aislinn, a Seattle native, graduate of UW and Seattle Culinary academy, was working towards her goal of becoming a chef. Sebastián, born and raised in Valparaiso, Chile, moved to Seattle in 2008 and had worked in Tom Douglas kitchens for 9 years.

After getting married in 2017, Aislinn went on to work at a Michelin-star restaurant in Spain and later became sous-chef at the well known Pike Place Market restaurant Matt’s in the Market. Seba meanwhile traded in his apron for a keyboard, enrolling in SCC’s Web Development program. In 2018 they were able to take a trip to Chile to visit family and celebrate nuptials. 

But it wasn’t just family that Seba introduced Aislinn to. Alfajores, a South American cookie noted for a delicate texture and thick caramel filling, were instantly loved by Aislinn, much like the sweet Chilean man who brought them into her life. They enjoyed them throughout Chile and at many Argentine bakeries during their week in Buenos Aires. Bringing those tastes and memories home, they began developing their own recipes in their Capitol Hill kitchen to share with family and friends. In 2020 the culinary passion became a business.

And the name? Oso Negro, Black Bear in Spanish, is as much an ode to the cookie’s roots as it is the story of the bakers behind them. Seba’s bear-like appetite meets Aislinn’s dependency to hibernate. South America meets the Pacific Northwest. Together they are Oso Negro Baking Co. Buen provecho, Seattle friends!

Aislinn McManigal y Sebastián Quintana se conocieron cocinando en el restaurante Lola de la compañía de Tom Douglas, en el Centro de Seattle. Aislinn, oriunda de Seattle, trabajó duro para graduarse de la Universidad de Washington y de la Escuela Culinaria de Seattle, y así lograr su objetivo de convertirse en chef. Sebastián nació y se crió en Valparaíso, Chile. En el año 2008 se mudó a Seattle, en donde trabajó para la compañía de Tom Douglas por 9 años. Trabajando codo a codo en la cocina, Aislinn y Sebastián reconocieron su fortaleza como equipo.

Después de contraer matrimonio en el 2017, Aislinn viajó a España para trabajar en un prestigioso restaurante con estrella Michelin. En su regreso a Seattle se convirtió en sous-chef del famoso restaurante de Pike Place Market, Matt’s in the Market. Seba empezó a tomar clases en Seattle Central para ser un desarrollador de páginas web.

En el 2018 recorrieron Chile durante un mes y medio, en donde conocieron cada parte de la familia Quintana y disfrutaron de los sabores locales de norte a sur. Esto nos lleva al delicioso alfajor, uno de los dulces favoritos durante la infancia de Sebastián. Aislinn y Sebastián probaron alfajores de todas partes, desde zonas rurales del sur de Chile hasta pastelerías artesanales de la gran ciudad de Buenos Aires, Argentina. Los sabores y recuerdos de este viaje los llevó a desarrollar su propia receta de alfajores, en su Cocina de Capitol Hill, para compartirlos con la familia y amigos.

De dónde surgió el nombre? Oso Negro Baking Company nació en una noche de desvelo mientras cocinaban y bromeaban sobre lo mucho que a Aislinn le gusta dormir y lo mucho que a Sebastián le gusta comer. "Como un oso feliz", dijo Aislinn. La especie de oso local del estado de Washington, el oso negro, combina perfectamente con los colores de un alfajor.
